First of all... Reroll Horde :D
But if you *insist* on going NE ;) then there are some guides out there. I've never levelled an Alliance so I can't give you time scales but his horde version of the guide was very good and easy to follow.
Here are some guides for you:
Level's 1-12 (http://www.wow-pro.com/node/960)
Level's 12-20 (http://www.wow-pro.com/node/1008)
Level's 20-30 (http://www.wow-pro.com/leveling_guides/bostons_20-30_alliance_leveling_guide)
Level's 30-70 (http://www.wow-pro.com/leveling_guides/james_alliance_leveling_guide) (I know you said only 1-40 but this gives you the option if you want to level any higher)
I hope these help you.

Most important thing about levelling a night elf is get the smeg out of the night elf zone!
I usually do everything up until the end of your class quests, when I'm about 17 i go to westfall, then redridge, then duskwood, then wetlands if needed, then STV, Southshire, Arathi highlands, etc etc. I just generally cherry picked my quests as yuo can be as selective as you want, as soon as you hit 58 (some people choose to wait till 60) you can hit up outlands, which has much better quest rewards and will accelerare your last 10/12 levels.
Dunno about specifically 1-40 but i did 1-70 in 8 days on my mage, woulda been just under but i often got bored and did instances. (quests often pose better xp than instances, unless you have quests for an instance of course :) )
Currently levelling my druid, who's on lvl 29, advantage of levelling a druid is you have fast dps and low downtime (cat form = blat things, pop out, heal up, back to cat).
The above post shows a pretty good guide is pretty good if you're new or unsure of where to go next, but theres a lot of travelling involved.
Another good thing for you to do is save up 2g and get a portal to shattrath. In the centre of shat are portals to the exodar, stormwind, ironforge and darnassus. This will rapidly speed up your levelling process, taking huge chunks out of travel time. Get a hearthstone location on the scryers tier, as you don't have to wait for the lift to get down (tough it does hurt a bit :D )

If you really did get from 1 to 70 in just 8 days I'm not quite sure if that's something to brag about.
When WOW first came out I had my bro in the US send it to me and I think it took me a few weeks of very late nights after work to get to level 40. Of course there are more streamlined ways to play that will get you there a lot faster so I guess if you're a casual gamer you should do it in about a week.
I'm not sure if I would recommend levelling up chars for the sake of it. The game takes on a very different dynamic once you reach top level and start questing with big groups. Most the fun I had was getting to around max, after that it gets boring.
If you play WOW for the combat element I think you'll find most FPS games more exciting. Must my 2 cents though.

He is probably talking about 8 days IN GAME time...and now with the level speed increase it is extreamly easy to level very fast...
I am currently leveling my hunter that is level 46 and taken around 3 days so far...

It's probably real time. Yesterday I read that a French guy went from level 60 to level 70 in just 28 hours after they released the expansion. Apparently to prepare for this he slept during the day before release to be fresh for it.
Then lots of guild friends helped power level to 70. Apparently they levelled like 5 chars to 62 first then in turn those helped him to 70 having him take all the exp from mobs.
Crazy stuff.

Some people will go further than others to achieve in games... some people have too much free time.

"Night Elves - The whores of the warcraft world, closely modeled off of real whores, and the closest thing Blizzard has gotten to anime in order to increase sales due to all the stupid Naruto fanboys out there. Mostly played as female by men to get attention from other men and epic lewt under the guise of being a hot myspace whore. "
"Rogue- These are the official backstabbing whores of the game, this class is usually played be stupid hyperactive basement dwellers who forgot to take their pills. They are also enormous control freaks who will do anything to complain about their class, even though they are by far the most powerful. 99% of the population of WoW."
I rest my case.

Rite...so that relates to everyone who levels a character?
I leveled my Mage is 9days something hours, is that real time then?

the /played time in game is real time, the amount of time you've spent logged in on that character, so if yours reads 9 days you've spent 216hours+ logged in on that character.
the french dude who levelled 60-70 in 28 hours did it real time, he didn't log off at all during that time and only took breaks to eat and pee, crazy ****, and a little sad if you ask me.
from a slightly more relevant point of view, if you're going to level a character now I'd recommend a human rogue rather than a night elf, human racials don't look all that awesome at the start, but 10% extra rep helps loads with the lv70 repgrind and the extra expertise with swords will pay dividends if you ever really want to take things seriously at the end game. Night elves by contrast have shadowmeld and a bit of nature resistance, not really useful to a rogue at any stage of the game.
