Just a note on servers and levels for WoWLAN:
Q: Do we all need to be on the same server?
No. We'll be putting up a page for people who have signed up to list their chars and levels across multiple servers so people can see others on the same server etc.
We'll also be doing some fun events at WoWLAN such as everyone creating level1 chars and doing silly races across Azeroth and taking on lvl12 elites and such like. This obviously won't require you having a char on the server :).
If you are thinking of starting a new char to level up and join in with "the masses" at the event, then we would suggest Al'Akir or Xavius. A lot of the MPUK community recently started afresh on Xavius and are in the 10-30 range currently. We'll be easily caught up :)

We're hoping for a wide variety of attendees from across several servers and certainly level ranges. As such it shouldn't be too much of a problem if you're not the same level as everyone else.
However, when the online list goes live of peopel's servers, chars and levels, you'll get an idea of anyone who's on your server and what levels you could try and get up to in time for the event. Keep an eye out for that post.
